Baked banana & filo parcels with pistachios

If there’s one dish that’s a bit fancy in here, it has to be this one. The team who helped me with the photo shoot laughed at me when I was making it. Timer in hand, they were convinced you couldn’t do it in 20 minutes. Well, sorry guys, you owe me: 14 minutes and 32 seconds, cooked and done.

Ingredients

Quantity Ingredient
butter, for greasing
4 ripe bananas
100g shelled pistachios
4 sheets filo pastry
vanilla ice cream, to serve

Method

  1. Preheat the oven to 200°C and lightly grease a baking tray.
  2. Peel and halve the bananas lengthways. Toast the pistachios lightly in a dry pan, then chop them roughly.
  3. Wrap each banana half with a scattering of pistachios in a piece of filo pastry (you’ll need to keep half the pistachios for later). Fold over the ends to make neat parcels.
  4. Place the banana parcels on the prepared tray and bake in the oven for 8–10 minutes.
  5. Remove from the oven, sprinkle with the remaining pistachios and serve with a scoop of vanilla ice cream.
