Instant strawberry ice cream

This has got to be one of the quickest desserts in the book. You can do it with frozen bananas, too: just have them ready-frozen, and this ice cream can be made and ready to eat in minutes. It contains hardly any fat and has such a fresh flavour. Buttermilk is the best liquid to use, but you can also use yoghurt, as it won’t split while blending.

Ingredients

Quantity Ingredient
400g fresh or frozen strawberries
50g caster sugar
1/2 teaspoon vanilla extract
150ml buttermilk

Method

  1. If using fresh strawberries, hull them and cut them in half. Line a baking sheet with clingfilm and spread the strawberries out on the tray. Put them in the freezer and freeze until hard. If using frozen strawberries, proceed from this point.
  2. Just before serving, put the frozen strawberries in a large food processor with the sugar, vanilla extract and buttermilk. Blitz until smooth and serve immediately.
