Ham, fried egg, beer mustard and homemade chips

Making your own mustard is easy and once you see just how easy it is, I reckon a few of you might take it up as a business. Mixing and matching the flavours is great fun too. I often make it at home to give away as a gift.

Ingredients

Quantity Ingredient
vegetable oil, for deep-frying
400g chipping potatoes, peeled and cut into batons 1 x 1cm and 6cm long
1 tablespoon vegetable oil
4 eggs
1/2 see method for ingredients, shredded
or thickly sliced good-quality cooked ham
sea salt

For the mustard

Quantity Ingredient
75g clear honey
50g soft light brown sugar
100ml good-quality white wine vinegar
75g black mustard seeds
75g yellow mustard seeds
100ml beer

Method

  1. To make the mustard, place the honey, sugar and vinegar in a saucepan and heat until the honey has dissolved.
  2. Put the mustard seeds and beer into a bowl and pour over the warm honey mixture, then stir to combine and set aside in the fridge for 2 hours, or even overnight.
  3. Pour into a food processor and blitz to a purée – it takes a good 5 minutes, then the seeds will break down and the mustard will become creamy.
  4. Spoon into a sterilised jar, seal and keep in the fridge for up to two weeks.
  5. Heat a deep-fat fryer to 160°C. Place the potatoes in the fryer and cook for 8–10 minutes until light golden-brown and cooked through.
  6. Meanwhile, heat a frying pan until hot and add the vegetable oil. Crack the eggs directly into the pan, then leave to fry,
  7. spooning the oil over the top of the eggs occasionally until just set and crisping around the edges. Add the ham to the pan as the eggs fry, to heat through and crisp slightly.
  8. Drain the chips on kitchen paper and sprinkle with sea salt.
  9. Pile the chips onto plates, place an egg alongside, shred some ham hock next to it and finish with a dollop of mustard.
