Apple milk pancakes with roasted apples, pears and walnuts, and a vanilla syrup

Pancakes should always be in any book of home comfort recipes. They are so simple to make and they also freeze really well – these ones included. Once you’ve made them, layer them between sheets of greaseproof paper and pop them into the freezer. To use them, allow them to defrost and then reheat.

For the pancakes

Quantity Ingredient
100g plain flour
40g caster sugar
1 teaspoon baking powder
3 eggs
100ml almond milk
2 tablespoons vegetable oil

For the apples and pears

Quantity Ingredient
2 apples, cut into chunks
2 pears, cut into chunks
4 tablespoons honey
75g walnuts

For the vanilla syrup

Quantity Ingredient
1 teaspoon vanilla bean paste
100g caster sugar
100ml almond milk

Method

  1. To make the pancakes, place the flour, sugar and baking powder in a bowl and whisk until combined. Make a hollow in the centre, then crack in the eggs and pour in the almond milk. Whisk gently from the centre outwards until all the flour is taken in and you have a smooth batter.
  2. Heat a frying pan until hot, then add the vegetable oil and a large spoonful of batter. Fry over a medium heat until golden-brown and little bubbles have appeared over the surface, then flip and cook for a further minute until cooked through. Set aside and repeat with the remaining batter.
  3. Heat a frying pan until hot and add the apples and pears. Fry for 2–3 minutes, then add the honey and 4 tablespoons of water and bring to the boil. Toss the apples and pears to coat, then add the walnuts.
  4. For the vanilla syrup, put the vanilla bean paste, sugar and almond milk into a saucepan, and bring to the boil, then reduce the heat slightly and simmer until thickened.
  5. Divide the pancakes between the plates, then surround with the apple mixture and drizzle with the syrup.
