Stock syrup glaze is perfect for brushing over cakes and tarts to give them a lovely, shiny finish. You can add all sorts of flavourings to it (star anise, cinnamon or lemon peel, for example). Just return a little to a pan, add your flavouring and heat through, then leave to infuse for 15 minutes. Strain and use as normal.

Ingredients

200g caster sugar
100ml water

Method

  1. Heat the sugar and water in a saucepan until the sugar has dissolved. Stir well, then bring to the boil.
  2. Remove from the heat and decant into a sealable container. Leave to cool, then cover and store in the fridge until needed (it will keep for up to 2 weeks).
  3. To use, brush over the baked cake or tart with a pastry brush and then leave to dry.
