Omelette in a flash

Did you see the movie Big Night? I love the final scene where Stanley Tucci’s character makes a simple omelette on screen in real time. It takes two and a half minutes and no words are spoken. He adds no more than a pinch of salt, but do feel free to add a small handful of shredded ham, chopped mushrooms or tomatoes to the pan before adding the egg mixture.

This is how I make my omelettes.

Ingredients

Quantity Ingredient
1/2 tablespoon olive oil
2 eggs
pinch sea salt

Method

  1. Heat the oil in a non-stick frying pan over a high heat. Whisk the eggs with a fork and add a pinch of salt. Lower the heat and add the eggs to the pan. Swirl the mixture around with a non-stick spatula until the omelette settles – it will take about 30 seconds. Cook for a further minute, then fold the omelette in half, slide it out of the pan and serve immediately.
