I used to have a bit of a penchant for cheesy gougères – those golden balls of batter that take about a month to walk off. So I set about trying to create that light, cheesy taste without the calories and ‘poof‘, here they are! They’re so moreish that they almost seem too good to be true, but you do need to make sure they’re eaten straight out of the oven or they will start drooping and look a bit sad.

Ingredients

Quantity Ingredient
4 egg whites
1 tablespoon grated tasty cheddar cheese
1 tablespoon grated parmesan cheese
pinch cayenne pepper
pinch white pepper
pinch sea salt

Method

  1. Preheat the oven to 200ºC. Line a baking tray with baking paper.
  2. Whisk the egg whites to form soft peaks. Gently fold in the two cheeses, the cayenne and white pepper and salt.
  3. Place neat rounded spoonfuls of the mixture on the baking tray, leaving about 3 cm between them to allow for spreading. Bake for 8–10 minutes, or until golden brown. Serve immediately.
