I know this is just peas and prawns, but they look great – all lime green and pink. The crunchy snow peas make delicious ‘boat’ containers for the prawn mixture. You could easily add a touch of chilli or cayenne pepper for a bit of extra zing. This is another dish that I’ve turned into an entrée on many occasions.

Ingredients

Quantity Ingredient
1 tablespoon mayonnaise
1 tablespoon greek yoghurt
salt and freshly ground pepper
10 freshly cooked prawns, finely chopped
1 tablespoon freshly snipped chives
20 large snow peas

Method

  1. In a small bowl, combine the mayonnaise and yoghurt and season with salt and pepper. Add the chopped prawns and chives and stir well to combine.
  2. Split each snow pea open to make a boat. Place a teaspoon of the prawn mixture inside each snow pea and serve.
