Barbecued chook with shredded Asian coleslaw

Go to your supermarket, buy a barbecued chook and a bag of mixed coleslaw (not drenched in a creamy dressing please) and presto! You have an easy and satisfying meal that won’t leave you wanting to raid the cookie jar.

Ingredients

Quantity Ingredient
1/4 barbecued chicken
1 teaspoon sesame oil
1 tablespoon extra-virgin olive oil
1 teaspoon light soy sauce
squeeze lemon juice
1 x 100 g bag coleslaw, without dressing

Method

  1. Pull one of the breasts off the chicken and use your fingers to shred the meat (I also include the skin, but if you’re being tough, discard the skin). Keep the rest of the chicken in the fridge for another meal.
  2. Combine the oils, soy sauce and lemon juice to make a dressing.
  3. Tip the coleslaw into a bowl, top with the shredded chicken, and drizzle the dressing over the lot. Toss and serve.
