Ladies’ luncheon chicken salad

I have no idea why I call this dish ‘ladies’ luncheon’. (It drives my dad mad.) I guess it just reminds me of something that two ladies might eat as they catch up over a light lunch. However, I do believe it is acceptable for men to eat this salad too.

Ingredients

Quantity Ingredient
200g barbecued chicken, finely shredded, skin removed
1 stick celery, finely sliced on the diagonal
2 spring onions, finely sliced on the diagonal
handful raw snow peas, finely sliced on the diagonal
1/4 cup walnut halves
salt and freshly ground pepper
freshly snipped chives

Dressing

Quantity Ingredient
1 tablespoon mayonnaise
1 tablespoon greek yoghurt
1 teaspoon soy sauce
1/2 lime, juiced

Method

  1. To make the dressing, combine the mayonnaise, yoghurt, soy sauce and lime juice in a small bowl.
  2. In another bowl, combine the shredded chicken, celery, spring onions, snow peas and walnuts. Add the dressing and toss together gently. Season with salt and pepper and divide between 2 bread and butter plates. Sprinkle with chives and serve.
