Rare roast beef rolls with vegies

There’s no need to cook a piece of beef yourself as most delicatessens can carve a few slices for you (although it’s a great way to use up any leftovers). Ask for the slices to be nice and thin.

Ingredients

Quantity Ingredient
1 tablespoon greek yoghurt
1/2 tablespoon mayonnaise
thin scraping hot english or french mustard
2 thin slices rare roast beef
2 spring onions, finely shredded
1 stick celery, cut into julienne strips
1/2 carrot, cut into julienne strips
1/4 continental cucumber, cut into julienne strips
salt and freshly ground pepper

Method

  1. Mix the yoghurt, mayonnaise and mustard and spread a thin layer on each slice of roast beef. Arrange the vegetables in an even line down the centre of the beef slices, season with salt and pepper and roll them up like sushi.
