Tastiest tomatoes with sea salt and olive oil

Anyone from the Mediterranean will have a good old laugh at seeing this included as a ‘recipe’, but sometimes the simplest dishes are the ones you forget about. I love this dish so much that I serve it nearly every night. I am very fussy with tomatoes and I don’t think I’m the only one, so I insist that you source the very best cherry tomatoes you can. Do not store these babies in the fridge.

Ingredients

Quantity Ingredient
12 cherry tomatoes, halved, (at room temperature)
sea salt
1 1/2 tablespoons best-quality extra-virgin olive oil
small handful flat-leaf parsley leaves
a few basil leaves
1/4 red onion, finely chopped

Method

  1. Arrange the tomatoes on a plate. Sprinkle with sea salt and drizzle on the olive oil.
  2. Leave to rest for about 10 minutes.
  3. Just before serving, chop the parsley and basil leaves finely. Scatter the onion over the tomatoes then top with the chopped herbs.
