Cos lettuce tacos

I love the taste of tacos but those corn-based shells are laden with fat. When I thought about it, I realised that what I really love about tacos is the taste of the mince with the Mexican spices combined with the crispness of the lettuce. These make a great meal or you can use baby cos lettuce leaves and serve them as a canapé.

Ingredients

Quantity Ingredient
1 tablespoon extra-virgin olive oil
350g premium-grade beef mince
1/2 sachet taco seasoning
1/2 small red chilli, finely chopped, (omit seeds if cooking for kids)
200ml water
1 cos lettuce, leaves broken apart
2 tablespoons grated cheddar cheese
1 tomato, chopped
1/2 red onion, finely chopped

Method

  1. Heat the oil in a frying pan over a medium heat. Add the beef mince and brown it slowly, stirring frequently. Stir in the taco seasoning, chilli and water and cook for 10 minutes.
  2. Use the cos lettuce leaves as shells and fill with the spiced mince mixture. Top with cheese, chopped tomato and a little onion.
