This is a great dish for sharing and the fragrance of the herbs and lime is divine! Once you have all the ingredients prepared, it takes only minutes to cook and serve.

Ingredients

Quantity Ingredient
1 tablespoon peanut or sunflower oil
1 teaspoon sesame oil
1/2 red onion, finely chopped
2 garlic cloves, finely chopped
1 small knob ginger, peeled and grated
1 small red chilli, finely chopped
2 kaffir lime leaves, finely shredded
220g chicken mince
squeeze lime juice

Accompaniments

Quantity Ingredient
handful vietnamese mint leaves, chopped
handful coriander leaves, chopped
1/2 red onion, finely sliced
small handful crushed peanuts
1 baby cos lettuce, leaves broken apart
1/2 continental cucumber, cut into thick strips
lime wedges

Method

  1. Heat both the oils in a wok or frying pan then quickly fry the onion, garlic, ginger, chilli and lime leaves over a medium heat, being careful not to burn them. Add the chicken mince and cook for around 7 minutes, stirring, until it changes colour. Add the lime juice.
  2. Spoon into 2 bowls and top with the chopped herbs, onion slices and chopped crushed peanuts. Arrange the baby cos lettuce ‘cups’ and cucumber strips on a separate plate and use as scoops. Serve with lime wedges.
