Fish and zucchini chips with tartare sauce

Ingredients

Quantity Ingredient
100g almond meal
sea salt and freshly ground pepper
8 flathead or whiting fillets
olive oil
lemon or lime wedges, to serve

Tartare sauce

Quantity Ingredient
1 tablespoon greek yoghurt
1 tablespoon light mayonnaise
1 tablespoon cornichons, chopped
1/2 tablespoon capers, rinsed and chopped
1 tablespoon flat-leaf parsley, chopped
Zucchini ‘chips’ with aïoli, to serve

Method

  1. Place the almond meal on a large plate and season with a pinch of sea salt and pepper.
  2. Coat each fish fillet lightly with the almond meal and set aside.
  3. Heat the olive oil and butter in a non-stick frying pan over medium heat. Add the fish and cook for about 3 minutes, then carefully turn and cook for another 3 minutes. Remove from the pan and place on paper towel.
  4. To make the tartare sauce, combine all the ingredients in a small bowl and refrigerate until ready to serve.
  5. Serve the fish with tartare sauce and zucchini ‘chips’.
