Ok so I don’t do chickpeas, which is a bummer because I love hummus. I know chickpeas are healthy and delicious but the carb count is not on the bonus side for me. But I DO do cauliflower. One day I was mucking around in the kitchen and thought ‘what if?’. So here’s my version of hummus… boombah-free!

Ingredients

Quantity Ingredient
1/2 cauliflower
sea salt
125ml olive oil
2 tablespoons tahini
1 garlic clove, chopped
1 lemon, juiced
black sesame seeds, for sprinkling
coriander leaves, to garnish
freshly ground pepper

Method

  1. Preheat the oven to 180°C. Line a baking tray with baking paper.
  2. Cut the cauliflower into small florets and place on the tray. Sprinkle with sea salt and pepper and drizzle with some of the olive oil.
  3. Bake for about 30 minutes. Take out of the oven and leave to cool.
  4. In a food processor, add the cauliflower, tahini, garlic, lemon juice and the rest of the olive oil. Process until smooth.
  5. To serve, sprinkle with some black sesame seeds and garnish with a few coriander leaves. This goes well with parmesan crisps or some celery and carrot sticks.
