Ingredients

Quantity Ingredient
6-8 parsnips, peeled, stringy cores removed, and chopped
1 tablespoon olive oil
sea salt
1/8 teaspoon nutmeg
freshly ground pepper

Method

  1. Preheat the oven to 200°C. Peel the parsnips, and lay them on baking paper on a baking tray. Drizzle with olive oil and sprinkle with sea salt and pepper.
  2. Roast in the oven for 20–25 minutes, or until they turn lightly golden, turning them once halfway through cooking.
  3. Remove from the oven and place the parsnips into a food processor. Add 250 ml water a little at a time and pulse until puréed to the desired consistency. Add the nutmeg and salt and pepper.
