This cocktail is best served in a highball glass.

Ingredients

Quantity Ingredient
45ml paperbark-infused cruzan rum, (see method)
8-10 mint leaves
6 chunks lime
15ml Sugar syrup
bundaberg ginger beer
dash angostura bitters
mint sprigs, to garnish

Method

  1. To make the paperbark-infused rum you need an 8 cm piece of fresh paperbark and 1 bottle Cruzan rum. Place the roll of paperbark into the rum. Leave overnight, then strain and bottle.
  2. To make the cocktail, build all the ingredients in a highball glass over crushed ice and swizzle. Garnish with the mint sprigs and serve with two paper straws.
