This cocktail is best served in an old-fashioned glass.

Ingredients

Quantity Ingredient
25ml sage syrup, (see method)
sugar and black pepper, to garnish
2 blackberries
1cm slice of jalapeño
50ml tequila ocho
15ml crème de mure
25ml fresh lime juice

Method

  1. To make the sage syrup, gently heat 250 ml water with 220 g sugar in a small saucepan over low heat. Add 10 g sage leaves and simmer for 15 minutes. Remove from the heat, strain the leaves from the syrup and discard.
  2. To make the cocktail, rim an old-fashioned glass with sugar and black pepper. Muddle the blackberries and jalapeño slice. Add the remaining ingredients and shake. Fine-strain into the glass with ice cubes.
