The Fashionable Cocktail

This cocktail is best served in an old-fashioned glass.

Ingredients

Quantity Ingredient
50ml tanqueray gin
30ml apple juice
20ml thyme and pineapple syrup, (see method)
20ml fresh lemon juice
7-8 mint leaves
champagne
mint sprig, to garnish

Method

  1. To make the thyme and pineapple syrup place 500 ml fresh pineapple juice, 250 g caster (superfine) sugar and 250 ml water in a small saucepan over low heat. Add a small bunch of thyme and stir gently until the sugar dissolves. Set aside to cool, then strain the liquid into a bowl covered with muslin (cheesecloth). Put the syrup in an airtight container and leave it overnight.
  2. To make the cocktail add all the ingredients, except the Champagne, to a shaker. Shake with ice and strain into an oldfashioned glass. Crown with crushed ice, top with Champagne and garnish with the sprig of mint.
