The Fashionable Cocktail

This cocktail is best served in an old-fashioned glass.

Ingredients

Quantity Ingredient
60ml ron añejo pampero selección rum
10ml cloudy apple juice
5ml cinnamon and clove syrup, (see method)
1 dash fee brothers chocolate bitters
1 dash angostura bitters
1 pink lady apple fan with 5 cloves, to garnish (see method)

Method

  1. To make the cinnamon and clove syrup, place 230 g sugar, 250 ml water, 1 broken cinnamon stick and 1 tablespoon whole or ground cloves in a saucepan. Heat on high until the sugar dissolves. Remove from the heat and allow to cool. Strain the mixture through a piece of muslin (cheesecloth) to remove the cinnamon and cloves.
  2. To make the apple fan, slice off one cheek of the apple. Place flat on a chopping board and cut 8 thin slices, but do not cut right through the apple. Fan the pieces out and stud the apple with 5 cloves along the top of the fan.
  3. To make the cocktail, add 15 ml rum at a time, stirring for 5seconds between pours, into an old-fashioned glass filled with ice. Pour in the cloudy apple juice and then add all the other ingredients. Finish withthe apple fan. Place the fan on top of the ice, resting on the rim of the glass.
