The Fashionable Cocktail

This cocktail is best served in a Champagne glass.

Ingredients

Quantity Ingredient
15ml honey syrup, (see method)
15ml fresh lime juice
30ml light rum
champagne

Method

  1. To make the honey syrup, the ratio is 1 part water to 3 parts honey. Put the honey and water in a pan and stir until the honey dissolves. Gently bring to the boil, then reduce heat and simmer, stirring, until thickened. Remove from the heat and allow to cool.
  2. To make the cocktail, shake all the ingredients, except the Champagne, with ice and strain into a chilled Champagne flute. Top with Champagne.
