Ingredients

Quantity Ingredient
1 cup rice
1 cup cold water
1/4 teaspoon salt
1/2 teaspoon granulated sugar

Method

  1. Place the rice in a saucepan with a tight-fitting lid.
  2. Put the saucepan under the tap and wash the rice well using cold running water to remove excess starch.
  3. Once washed, pour over the cup of cold water and place the pan on the hob.
  4. Cover the saucepan with the lid and bring the rice to the boil over a medium heat.
  5. Once vigorously boiling, lower the heat to a simmer, replace the lid to cover and leave to simmer for 10 minutes, until the water level is the same as the top of the rice.
  6. At this point, turn off the heat and leave the rice to rest for a further 10–15 minutes keeping the lid on at all times.
  7. Use a wooden spoon to fluff up the rice grains before serving.
