Ingredients

Quantity Ingredient
2-3 garlic cloves, peeled
250ml cashew cream
1/2 lemon, juiced
1 teaspoon ground dried chipotle peppers or smoked paprika
1/3-3/4 teaspoon mustard
1/2 teaspoon sea salt
freshly ground black pepper

Method

  1. Crush the garlic and add to the cashew cream along with the lemon juice, chipotle, mustard, salt and some freshly ground black pepper. Blend to combine.
  2. Taste. If it lacks punch, add more salt. Store in an airtight container and keep chilled until ready to use. It will keep in the fridge for up to a week.
