Ingredients

Quantity Ingredient
1-2 lemons, juiced
60ml tahini
splash balsamic vinegar
sea salt
freshly ground black pepper

Method

  1. In a bowl, combine the lemon juice, tahini, balsamic and a little water. Stir to combine. It will go really thick at first, but will thin out as you add water. Keep adding water, little by little, until it is smooth and liquid-like in consistency. Season to taste. Decant into a clean jar. It will keep in the fridge for up to a week.
  2. Depending on what you are using this with, you might need to sweeten it. I usually make this for my coleslaw, which contains apple, and they are divine together!
