Potato, leek and white bean soup

Potato and leek soup is one of my all-time favourite soups, flavour-wise, but as a meal it is a bit lacking nutritionally. In order to be able to justify eating it as a meal I add white beans, which boost the protein and iron content while making this a soup that actually keeps you full.

Ingredients

Quantity Ingredient
olive oil
2 large white onions, peeled
4 garlic cloves, peeled
3 leeks
1kg large potatoes, scrubbed and washed
500g cooked white beans
or 2 tins cooked white beans, drained
1.5 litres vegetable stock
1 bay leaf
2 teaspoons sea salt
freshly ground black pepper, to taste
herbs, such as parsley, chives or winter savory
crushed red chilli, to taste
toasted bread, to serve

Method

  1. Place a little oil in the bottom of a pan and then place over a medium heat. Chop the onions, garlic, leeks and potatoes, adding to the pan as you go and stirring after each addition.
  2. Add the beans, veggie stock, bay leaf and salt. Bring the soup to the boil and then lower to a simmer. Allow to simmer for 20 minutes or until the potatoes are easily pierced with a fork.
  3. Remove from the heat and allow to cool for 10 minutes. Remove the bay leaf and blend the soup until smooth.
  4. Serve topped with lots of black pepper, fresh herbs of your choice, chilli and toasted bread. Carbs on carbs on carbs. Yum.

Hot tip

  • If you prefer a chunkier soup, only blend half of the soup and then stir the remaining chunks through.
