Who says vegans can’t enjoy creamy, delicious coleslaw? This is quick to make and is so yummy it has even fooled the most carnivorous of family members who think that vegans only eat iceberg lettuce.

Ingredients

Quantity Ingredient
1/4 red, green or savoy cabbage
3 large carrots, peeled
1 granny smith apple
1 portion Creamy tahini dressing
or 60g vegan mayo
vegan mayo toasted pumpkin,sunflower or sesame seeds or all three
small handful flat-leaf parsley, finely chopped
sea salt
freshly ground black pepper

Method

  1. Finely chop the cabbage, then peel and julienne or grate the carrot. If using an apple, peel and grate this too. Combine in a bowl with the dressing and seeds. Stir in the parsley, if using, and season to taste.
