The secret to successful banana ice cream – or any banana treat, for that matter – is ripe and spotty bananas. As they age, bananas get sweeter and their texture more fluffy, giving you a sweet and fluffy ice cream that can then form the base for an array of different ice cream flavours. It’s so easy and it never fails to blow people’s minds!

Ingredients

2 spotty bananas

Optional extras

Quantity Ingredient
1 teaspoon ground cinnamon
2 tablespoons peanut butter
1-2 tablespoons vegan chocolate chips
1 tablespoon maple syrup
2 tablespoons dehydrated strawberries
any other nut butter, sweetener, topping, depending on taste

Method

  1. Prep your bananas a night or two before you make the ice cream: peel and chop the bananas into chunks, then pop them into a plastic tub or freezer bag and place in the freezer until they have frozen.
  2. Take the bananas out of the freezer and leave them to thaw for about 10 minutes so they aren’t rock hard chunks.
  3. Pop them into your food processor and blend until smooth and creamy. At first they will go almost crumbly, but the more you blend, the creamier they will get.
  4. Add any of the optional extras you like and blend to combine, then serve or keep in the freezer until ready to eat!

Top tip

  • Once you get as addicted to this as I am, you will get into the habit of always having bananas ripening so you have at least a few ice-cream-ready bananas in your freezer.
