The perfect breakfast or sweet snack that will warm your insides and make your skin glow.

Ingredients

Quantity Ingredient
100g rice flakes or quinoa flakes
250ml coconut milk
2 teaspoons ground cinnamon
pinch sea salt
1/2 teaspoon vanilla powder or extract, (optional)
150g blueberries

To serve

Quantity Ingredient
hemp seeds
pomegranate seeds
coconut flakes
coconut sugar
coconut cream

Method

  1. Place the rice flakes or quinoa, coconut milk and 250 ml of water in a small saucepan on a high heat and bring to a boil.
  2. Once boiling, lower to a medium heat and allow to simmer away until all of the liquid is absorbed – about 5 minutes, but keep an eye on it.
  3. Stir in the cinnamon, salt, vanilla and blueberries. Spoon into bowls and top with your favourite antioxidant-filled foods. Pictured here are hemp seeds, pomegranate seeds, coconut flakes, pumpkin seeds, coconut sugar and a dollop of coconut cream.

  • You can use standard oats or buckwheat in place of rice or quinoa flakes. Use raspberries or blackberries if you can’t find blueberries.
