A vegan spin on the iconic Elvis sandwich of bacon, banana and peanut butter.

Ingredients

Quantity Ingredient
coconut oil
2 slices Banana bread
peanut butter
handful Coconut bacon

Method

  1. Place your frying pan (skillet) on a medium heat, melt some coconut oil in the bottom and place both slices of banana bread in there. When golden brown, flip and toast the other side (you can add more coconut oil before doing this if you wanna).
  2. Slather some peanut butter on one slice of toasted bread, top with the coconut bacon, then the second slice of banana bread. Slice and eat!

Note

  • You can use a toaster or flat sandwich grill to toast the banana bread, but be careful putting super moist bread in the toaster as it might fall apart when you try to retrieve it – and we all hate losing things in the toaster, right? If you want extra decadence, add fresh bananas or melted vegan chocolate to the sandwich.
