The always delicious, infinitely versatile and insanely simple vegan staple that also happens to be really, really good for you.

Ingredients

For the basic chia pudding

Quantity Ingredient
2 tablespoons chia seeds
200ml nut milk
1 tablespoon maple syrup
pinch sea salt
splash natural vanilla extract

Optional extras

fruit, nuts
cacao powder

Method

  1. Combine the basic chia pudding ingredients in a 500 ml jar. Screw on the lid and shake to combine. Shake again after 10 minutes to ensure no clumps are forming at the bottom (if they are, use a fork to separate them out). Place in the fridge overnight or for at least an hour.
  2. Enjoy on its own or with any combination of fruit and nuts. If adding cacao powder, dissolve first with a tiny bit of hot water and then add to the milk before mixing in with the chia seeds. Some people like to add chocolate or peanut butter, but I prefer to keep the pudding itself simple. Store in the fridge for up to a week.

Top tip

  • If you don’t have a jar, you can use a bowl and fork – just make sure the mixture is really well stirred to prevent clumps from forming.
