This isn’t really a jam in the traditional sense but more like a type of spread. It can be made as a quick treat to enjoy with freshly made scones or bread and plenty of butter. You can also make it with blackberries or plums when they are season and are plentiful or with pears when you should add a lump of butter and brown them first before adding the other ingredients.

Ingredients

Quantity Ingredient
1kg strawberries
250g soft brown sugar
2 sprigs thyme
150ml water

Method

  1. Put all of the ingredients into a large heavy-based saucepan and simmer over a gentle heat for 20 minutes, stirring occasionally. Leave to cool completely.
  2. Remove the woody stems of the thyme and discard. Spoon the jam into clean sterilised jars with a good seal and keep in the fridge for up to 7 days. Note that as this isn’t a traditional jam; it won’t keep for quite as long.
