It was partly thanks to the inspirational St. John restaurant in London that our interest in this most traditional of English cakes was rekindled. Store-bought versions can be very dull, but freshly made with a generous filling of spicy currants and a crispy, sugary top, it is sublime. Add a chunk of Mrs Kirkham’s Lancashire cheese and you have a great alternative dessert – made even better with a glass of Oloroso sherry.

Ingredients

1 pack ready rolled puff pastry

For the filling

75g dark muscovado sugar
250g currants
50g sultanas
1/2 teaspoon mixed spice
1/2 teaspoon ras el hanout
1 lemon, zested and juiced

For the topping

Quantity Ingredient
1 egg, beaten
2 tablespoons caster sugar

Method

  1. Preheat the oven to 180°C and line a baking tray with baking parchment.
  2. Put all of the filling ingredients into a stand mixer with the paddle attachment. Mix at the slowest speed for 8 minutes until the mixture is sticky.
  3. Straighten the puff pastry out on to a clean work surface and divide it into 6 equal-sized squares. Divide the filling mixture evenly among the pastry pieces, spooning it into the middle of each square.
  4. Use your finger to dab a little warm water from the kettle round the edge of each square. Hold the square of pastry in the palm of your hand and pull a corner into the middle; press it down on to the mixture. Continue to pull and fold the edges and corners of the pastry in until you form a circle. Place the ball of eccles cake on to the work surface and, with the palm of your hand, press down gently to make the cake about 8 cm in diameter. Repeat this process for the remaining 5 squares.
  5. Place the Eccles cakes seam-side down on to the lined baking tray. Brush them with the beaten egg and sprinkle over the white sugar. Carefully make 3 x 1 cm cuts in the middle of each cake, then bake in the preheated oven for 22 minutes. They taste best when they are very brown and caramelised.
