Blood oranges with cinnamon syrup

Ingredients

Quantity Ingredient
4 blood oranges, peeled and broken into individual segments
500g ricotta
1/2 lemon, zested
1 tablespoon icing sugar, sifted
sprig mint, to serve

For the syrup

Quantity Ingredient
300ml water
150g caster sugar
1/2 teaspoon ground cinnamon

Method

  1. Make the syrup by putting all the syrup ingredients into a medium saucepan over a high heat. Bring the liquid to the boil and boil for 10 minutes or until the syrup has thickened and will coat the back of a spoon.
  2. Pour the syrup over the orange segments in a bowl and leave to cool. Meanwhile, in a separate bowl, gently combine the ricotta, lemon zest and icing sugar.
  3. Arrange the oranges on 4 small plates and add a tablespoon of the ricotta mixture into the middle of each plate. Serve with a sprig of mint.
