You can buy figs out of season, but they tend to be very firm, so baking them, like in this recipe, works wonderfully. However, if you can get them in season when they are soft and perfectly ripe, then you can make this with fresh figs warmed simply by the summer sun.

Ingredients

Quantity Ingredient
8 ripe figs, (in-season are best)
100g dark chocolate, broken into pieces
175ml double cream
1 teaspoon rum
250g mascarpone
50g icing sugar, sifted
30g salted pistachios, shelled and chopped, (optional)

Method

  1. Cut each fig vertically twice, but not quite through to the bottom, so that you have 4 pieces still held together at the base of the fig. If they are not perfectly ripe, preheat the oven to 180°C, then place the figs on to a baking tray and bake for 20 minutes.
  2. Melt the chocolate in a medium heatproof bowl sat over a saucepan of gently simmering water – make sure the bottom of the bowl isn’t touching the water. Remove the bowl from the pan and sit it on a tea towel on the worktop. Pour in the cream and then the rum, stirring all the time.
  3. In a separate bowl, combine the mascarpone with the icing sugar.
  4. Place 2 figs on to each plate and spoon over a tablespoon of the chocolate sauce. Serve with a generous dollop of the mascarpone and, if you like, a sprinkling of chopped pistachios.
