Seafood salad is called salpicón de marisco in Spain and you can use as many different types of seafood as you can get in the market that day.

I had a similar dish in a bar near San Sebastián, and when I saw it on the menu I wasn’t particularly sure about it, so obviously I had to order it. I have to say that the flavours worked so well; the hit from the chilli, the sweetness of the fruit and the saltiness and sweetness of the seafood are a perfect combination.

Ingredients

600g fresh whole squid, cleaned, (ask a good fishmonger)
18 small raw shell-on prawns
18 fresh queenie scallops
olive oil
300g fresh palourde clams, cleaned

For the dressing

Quantity Ingredient
1 small mango
1 red chilli, deseeded and finely chopped
1 lime, zested
2 limes, juiced
5 tablespoons extra-virgin olive oil
handful chopped coriander
sea salt
freshly ground black pepper

Method

  1. Cut the body of the squid into squares and score in a crisscross pattern with a very sharp knife, being careful not to slice all the way through. Slice the tentacles into lengths. Toss all the seafood, except the clams, in olive oil.
  2. Make the dressing. Finely chop the flesh of the mango and mix with the rest of the ingredients, season well and set aside.
  3. Heat a large heavy-based frying pan or chargrill pan over a high heat. Cook the squid and octopus first, for a couple of minutes, turning, until tender, then remove to a serving dish.
  4. Add the prawns to the pan and cook, turning, until they have turned pink. Add to the squid. Next cook the scallops for a minute, then turn and cook for a minute more until golden but just cooked. Add to the dish.
  5. Finally cook the clams. Tip into the pan and cover with a lid (or use a baking sheet) and allow to steam open (discard any clams that refuse to open). Tip into the serving dish, toss together with the dressing and serve warm.
