Orejitas means ‘little ears’ because of the shape, and they are very similar to coquillos in Extremadura.

It’s a real shame that something as gorgeous as this seems to be increasingly difficult to find nowadays. Okay, I know this might be because they’re normally fried, and possibly a bit unhealthy, but please give me a break! Think of this as a real treat or something to have with a cortado. If you’re in the UK, you might have just found the perfect treat to have with your cup of tea!

I’d love you to try this really tasty recipe. I’d eat them all!!

Ingredients

Quantity Ingredient
250g plain flour, plus extra to dust
20g baking powder
a lemon, finely grated zest
1 teaspoon ground cinnamon
25g unsalted butter, softened
20g caster sugar, plus extra to dust
good pinch salt
1 egg
110ml whole milk
1.5 litres vegetable oil, to fry

for the syrup

Quantity Ingredient
200g honey
100ml anise or any aniseed-flavoured liqueur

Method

  1. Put the flour, baking powder, lemon zest and cinnamon in a bowl with the butter, sugar and salt. In a separate bowl, mix the egg and milk together. Add to the flour mixture and bring together into dough. Knead for 10 minutes until you have a smooth elastic dough.
  2. Lightly flour a baking sheet. Divide the dough into 7 × 60 g portions and roll into balls, place on the baking sheet and leave in a warm place, covered with lightly oiled cling film for 1 hour 15 minutes or until doubled in size.
  3. Meanwhile, make the syrup. Heat the honey and anise together until you have a light syrup. Keep warm.
  4. Heat the oil in a deep pan to 170°C or until a cube of bread browns in 30 seconds. Roll out the dough balls to as thin a disc as you can. Deep fry them one at a time for 1–2 minutes, turning, until golden brown and puffed. Drain on kitchen paper then brush with the warm syrup and place on a cooling rack over a baking sheet to drain off any excess. Dust in sugar and serve.
