Strawberries with vermouth vinegar

One of the good things about the end of spring and the beginning of summer is the arrival of all the fruit – strawberries are one of my favourite fruits. British strawberries are amongst the best in the world, but some types of Catalonian strawberries are fragrant and juicy too, in a different way.

This is one of the simplest recipes ever, and by adding the vinegar, it is really refreshing and delicious for summertime.

Ingredients

Quantity Ingredient
400g strawberries, hulled and halved
120ml vermouth vinegar
70g caster sugar
3-4 sprigs lemon verbena, (or lemon thyme)

Method

  1. Put the strawberries in a dish and cover with the vinegar, sugar and verbena. Mix and set aside to macerate for a couple of hours before serving.
