Some of my best friends are … vegetarians! Although I’m not, that doesn’t stop me appreciating and enjoying the wonderful world of vegetables. I especially like the first-class vegetables that grow in Catalonia. Being from a farming family, I grew up understanding the love and pleasure, but also the hard work, that goes into developing a vegetable garden.

Sometimes, if the ingredients are really great, fresh, and prepared and seasoned well, I just love to eat a vegetable dish on its own, letting the flavours speak for themselves. Raw or cooked, eaten on their own or as an accompaniment to a main dish, vegetables are so versatile it’s worth getting creative.

Cooking and enjoying a range of vegetables reminds me of listening to an orchestra – each has its own distinct character and flavour but, when prepared in harmony with others, can be an out-of-this-world food experience.
