Do not bother with liquorice powder or root as they are just not strong enough. Use these liquorice pellets and if you are a lover of liquorice you will not be disappointed. I like really strong liquorice and am very happy to double the strength, but I suspect for most people 16 pellets will be enough. People seem to have a very strong reaction to this ice cream – some are addicted; others won’t go near it!

Ingredients

Quantity Ingredient
800ml Basic sweetened ice cream mix
16 amarelli spezzata liquorice pellets
2-3 tablespoons Blackcurrant ripple

Method

  1. Make one quantity of the basic sweetened mix and prepare to the stage before cooling.
  2. Whisk the liquorice pellets into the hot ice cream mix until completely melted. Continue to stir at this temperature for 4 minutes or so.
  3. Leave to cool, then pour into an ice-cream maker and churn.
  4. Remove the ice cream from the machine and layer it into a container, gently rippling it through with the blackcurrant ripple.
  5. Keep in the freezer until ready to serve.
