I love standing behind my ice cream counter watching children’s reactions to the the vivid and exotic colours of the sorbets: they seem drawn to them as if to jewels in a treasure chest. Like a jewel, a sorbet has a purity and intensity. It reflects the light enticingly, and there is a crystal clarity to the flavour. Our sorbets offer a delightful alternative to our dairy-based ice creams and are always popular with adults for their light and refreshing qualities, or with a wafer and a cone for an adventurous child. Each sorbet recipe makes approximately 1 litre, unless otherwise stated.
