This is not a flavour for the faint-hearted as it is extremely tart and tangy. Best eaten sitting down!

Ingredients

Quantity Ingredient
500ml lime juice
1 star anise
100ml Glucose syrup
2 tablespoons lime zest
1 tablespoon finely ground sichuan pepper
200ml Sugar syrup

Method

  1. Pour the lime juice into a bowl. Add the star anise, glucose syrup, lime zest and Sichuan pepper and stir to combine.
  2. Refrigerate for 6 hours or preferably overnight.
  3. When ready to churn, remove the mixture from the fridge, discard the star anise, then add the sugar syrup and 250 ml water.
  4. Pour into an ice-cream maker and churn.
  5. Spoon the churned sorbet into a container until ready to serve or freeze until needed, removing it 20 minutes before serving so it can soften a little.
