Amaranth, olive and fig salad

For me, this is a kind of ‘everything’ salad. It’s got your whole grain, your good fats, some dark greens and a bit of natural sweetness. So when you feel like you just need a good dose of as many nutrients as possible, let this be your go-to salad. And, luckily, it’s easy, too!

Ingredients

200g uncooked amaranth
190g pitted black and kalamata olives
75g pecans
4 spring onions, chopped
1/2 teaspoon chilli flakes
good squeeze honey
1/2 lime, juiced, added to taste
4 fresh figs, quartered
4 tablespoons olive oil
handful flat-leaf parsley, chopped
sea salt
freshly ground black pepper

Method

  1. Boil 600ml water in a pan and add the amaranth. Cover and bring back to the boil, then reduce to a simmer for 15 minutes. Once cooked, drain off any excess water.
  2. Meanwhile, place the olives, pecans, spring onions, chilli flakes, honey, lime juice and figs in a bowl and mix with the olive oil. Add the cooked amaranth and chopped parsley and mix well to combine. Add more lime juice if needed and season with sea salt and black pepper.
