This colourful dish can either be used as a very light lunch option or alternatively as a fantastic side dish. Beetroot (beets) are among the healthiest foods in the world and they contain a unique type of phytonutrient known as betalain. Research has shown that betalains are amazing for providing antioxidant, detoxification and anti-inflammatory support for the body. So you are eating an all-round winner!

Ingredients

Quantity Ingredient
8 cooked beetroot, quartered
1 x 400g white beans
small handful pine nuts, toasted if preferred

For the dressing

Quantity Ingredient
1 tomato
1 garlic clove
handful mixed mint,parsley and basil, plus extra, chopped, for garnishing
2 tablespoons capers
1 tablespoon olive oil
1 lemon, juiced
sea salt
freshly ground black pepper

Method

  1. Combine the beetroot and white beans in a large salad bowl. Blend all the ingredients for the dressing in a food processor or blender and use to coat the beetroot and beans.
  2. Before serving, garnish with extra mint, parsley and basil as desired, and don’t forget to top with your pine nuts. Enjoy!
