Immunity-boosting red potato salad with honey tahini dressing

On those days when you might need to give your body a bit of a rest, such as after an indulgent weekend, this is the salad that will help support your liver and make you feel better and brighter in no time. The flesh of red potatoes is jam-packed with vitamin C – 45% of our RDA (recommended daily allowance) – and the skin provides most of the fibre. Not only does vitamin C boost immunity, it helps repair the body, too.

Ingredients

Quantity Ingredient
6 red potatoes, quartered
4 small handfuls watercress
1 pear, cored and diced
large handful walnut halves, roughly chopped
small handful mint, chopped
1 lemon, zested
sea salt
freshly ground black pepper

For the dressing

Quantity Ingredient
2 tablespoons tahini
2 tablespoons honey
1 lemon, juiced
2 tablespoons olive oil
1 teaspoon chilli flakes

Method

  1. Put the potatoes into a large saucepan and cover with water. Bring to the boil over a high heat and cook until soft, about 15 minutes. Remove from the heat, drain and rinse with cool water.
  2. Meanwhile, mix together the dressing ingredients in a small bowl and put to one side.
  3. In a large bowl, combine the watercress, pear, walnuts and mint. Add the cooked red potatoes and coat with the honey and tahini dressing. Mix well, season with salt and pepper, garnish with the lemon zest and boom, your immune system will LOVE you!
