This comes from my lovely sister-in-law, Jemima. And I love how this recipe can be so much more than ‘just a salad’. This is her take on it: “This is a wonderful accompaniment to any summer meal, and is especially great with grilled salmon. You can add shredded cooked salmon or chicken for a more filling mixture. We also love it rolled into fresh, crunchy spring rolls, dipped into a bit of homemade sweet chilli sauce.” Even her two young children aged three and five love it, too! For me, that says it all… get cooking!

Ingredients

Quantity Ingredient
1/2 small white cabbage, finely shredded
4 carrots, grated
2.5cm piece fresh ginger, peeled and grated
1 cucumber, cut into thin strips or matchsticks
1 red chilli, seeds removed if you like, sliced into fine rings
2 limes, zested and juiced
2 tablespoons sesame seeds, toasted
sprinkle coconut palm sugar
pinch sea salt
handful coriander leaves, chopped

Method

  1. Place the cabbage, carrots and ginger in a bowl with the cucumber, chilli and lime zest and juice and toss to combine. Add the toasted sesame seeds, toss again and add the sugar and salt as desired, plus the chopped coriander leaves.
  2. Fresh, zingy and full of raw foods!
