When it comes to easy recipes that pack a nutritional punch, lentils are my favourites. They are quick to make, taste yummy and are filled with all things good. With the addition of the peas, this is a very filling salad that’s super easy to take out on the go. And the lemon dressing... well, it’s to die for!

Ingredients

Quantity Ingredient
150g mangetout
1 x 400g puy lentils, drained and rinsed
10 radishes, thinly sliced
large handful dill, chopped
1 red onion, thinly sliced into half moons
large handful pumpkin seeds
1 pomegranate, seeds
1 avocado, peeled, stoned and chopped, optional
fresh greens, optional

For the dressing

Quantity Ingredient
1 garlic clove, crushed
1 teaspoon wholegrain mustard
2 lemons, juiced
good squeeze honey
sea salt
freshly ground black pepper

Method

  1. In a large bowl, combine the mangetout, lentils, radishes, dill, red onion, pumpkin seeds, pomegranate seeds and avocado, if using. And of course, feel free to add some fresh greens, too!
  2. Whisk all the dressing ingredients in a small bowl, drizzle over the lentil mixture and toss to combine.
