Smoked paprika, black beans and sprouting broccoli salad

Purple sprouting broccoli brings an amazing combination of colour and crunch to a dish and is also, of course, rammed full of nutrients. The high vitamin and mineral content of broccoli, coupled with its exciting antioxidant count, make it an all-round winner for your health.

Ingredients

Quantity Ingredient
250g purple sprouting broccoli
1 x 400g black beans, drained and rinsed
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1 tablespoon honey
2 spring onions, finely diced
1 avocado, peeled, stoned and cut into small chunks

For the dressing

Quantity Ingredient
handful coriander
small handful blanched almonds, ideally soaked for a few hours, but don’t worry if not!
2 tablespoons almond milk
1 lime, juiced

Method

  1. Bring a large pot of water to the boil and cook the broccoli for 5 minutes. Be careful not to overcook it so that you don’t lose too many of the nutrients. Drain and rinse.
  2. In a frying pan over a medium heat, combine the black beans, smoked paprika, cumin and honey. Stir this together well and cook for 5 minutes.
  3. In a large bowl, combine the sprouting broccoli, seasoned black beans, spring onions and avocado. Finally, blend all the dressing ingredients in a food processor or blender until you have a lovely chunky dressing (that tastes great, too!) with which you can coat the broccoli and bean salad really well.
