I’ve previously struggled to get red cabbage into my diet. Red cabbage is some serious brain food. It’s packed with vitamin K and anthocyanins that help with mental clarity. But these nutrients also improve your defence again dementia and even Alzheimer’s. This is a super on-the-go salad that I love to eat once a week.

Ingredients

Quantity Ingredient
1 small red cabbage, finely shredded
1 x 200g tin black beans, drained and rinsed
handful coriander, chopped
1 red pepper, seeds removed and chopped
1/2 cucumber, chopped
1 avocado, peeled, stoned and chopped
25g sunflower seeds
2 tablespoons olive oil
1 lime, juiced
1 teaspoon chilli flakes

Method

  1. Place the shredded cabbage in a large bowl with the black beans, coriander, red pepper, cucumber, avocado and sunflower seeds and mix well. In a small bowl, mix together the olive oil, lime juice and chilli flakes and drizzle over the cabbage salad.
  2. And there you have it – an easy and delicious way to get that all-important red cabbage into your diet more regularly!
