Okay, so you say you don’t like Brussels sprouts? I dare you to try to this salad and then let me know if you still don’t like them! I grew up not wanting to see or eat Brussels sprouts, but then I discovered how good they are for me. These little guys are bursting with protein, fibre, vitamins, minerals and antioxidants. In fact, there’s been a renewed interest in the emerging health benefits of Brussels sprouts recently. To be continued… But, for now, let’s eat!

Ingredients

Quantity Ingredient
50g walnut halves
2 super-large handfuls brussels sprouts, about 12 – trimmed and shredded or finely grated
1 large bunch kale, stems removed and leaves thinly sliced
handful mint, chopped
1 green apple, cored and chopped

For the dressing

Quantity Ingredient
1 small garlic clove, crushed
2 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon dijon mustard
1 teaspoon chia seeds, optional
1 lemon, juiced

Method

  1. Preheat the oven to 180°C and place the walnut halves on a baking sheet. Bake for 10 minutes until lightly toasted.
  2. Meanwhile, combine the Brussels sprouts, kale, mint and apple in a large bowl. In a separate small bowl, whisk together all the dressing ingredients.
  3. Once the walnuts are toasted, mix into the salad and drizzle the dressing over the top. Toss well to combine and enjoy those Brussels sprouts and the Greenest Salad ever!
